Staying gentle so far, with one of the more refined Irish whiskies on the market. Knappogue Castle 12 Year is triple distilled and aged in ex-bourbon casks. The palate is soft, with vanilla custard and toasty grain, giving way to orchard fruit and a nice malty finish. Slainte!
